the Start of a New Decade

We can hardly believe its the start of a new year and a new decade! It seems like only yesterday a young Jasmin & Matt decided to move from the little old Winnipeg to the big city of Montreal. We were in our 20’s, full of life and we wanted change, something new and exciting. Something, that later in life we could tell stories about.

That was 10 years ago! Fast forward to the year 2014. It’s mid July and after years of planning and saving we boarded a plane with our suitcases, our two black cats (Sushi & Princess) and started this incredible new adventure in Mexico. To be completely honest, when we landed in Mexico, mid July at first we thought we might have a mistake (it was in the mid 40’s with humidity). Obviously we made the right choice and now it’s been 5½ years, there have been ups and downs but we wouldn’t have it any other way.

We wanted to start the 2020s off right. More time together, more adventures, more photos, more good food and hopefully less stress. Taking it easy on the 31st was a breeze (we aren’t 20 any more) and so with our alarms set for 5:15am we arose before sunrise and headed to the beach with our blankets, a couple of beers (Tsingtao) and a bottle of proseco. There is nothing like starting off the day/year/decade on the beach in Playa del Carmen as the Amber sun rises over the Eastern horizon. It’s amazing how many people get up early (or stay up all night) to see the sunrise on New year’s day.

We’re now only a week and half into January and it’s already been a whirlwind. Lots of new bookings, lots of editing and a lot of up coming weddings. Next week we’re off to Belize to photograph our friends Alyson & John’s destination wedding at Caye Caulker and we’re absolutely ecstatic. It’s going to be a blast and we can’t wait to take photos. We’ll make sure to share a blog post about that adventure when we return.

We want to wish everyone an incredible start to 2020, the year and the decade. It’s going to be an adventure and we cannot wait to share it with you all <3

Home Made Perogies for Ukrainian Christmas

My incredible SO kneading the perogy shell dough… The dough needs to be perfect or they will fall apart when parboiling. The dough is a simple flour, water, egg, salt, milk, oil mixture.

It’s very important to let your dough sit. Don’t rush. We let it sit for at least an hour.

These are our two fillings. Typical perogies have potato and cheese filling, Sauerkraut or fruit filling but really anything goes. We like to get creative so these batches were potato with portobello and Swiss cheese followed by potato, roasted orange pepper and aged cheddar.

You need a solid flat surface to roll out your dough and cut the shells. We use a coffee cup to cut the perfect size. We also suggest a really good rolling pin. Back in Canada we used a marble one but here we use a beautiful Mexican hard wood solid rolling pin. I love those colours!!

My SO is the master at filling and pinching perogies, I do the rolling and the parboiling.

In the pot they go. We boil water with salt and oil so the perogies don’t stick to the bottom or each other.

Now they need to cool. These are our two batches. About 8 dozen total (there would be more but we ate a bunch while cooking)

The final product. Fried with butter or oil. Served with sour cream, bacon and onions… Though we don’t have bacon tonight or onions so that will have to wait. Perogies are also amazing deep fried and some just like them boiled.

How ever you like them it’s all good. They are delicious little pillows of potato, cheese and love.

Another Beautiful Summer Day in Playa del Carmen Mexico

There are two important things that we haven’t done in a while so I thought, let’s try and kill two birds with one stone. Jasmin and I love walking into town along the beach from our gated community on the north end of Playa del Carmen. The walk takes about 2 hours but the time flies and the scenery is so incredibly beautiful. I figured we could enjoy a day walking into town and then I could write a blog update about it.

Jasmin & I live in the lush and quiet community of Lol Ka Tun on the north side of Playa del Carmen. The walk from our house to Xcalacoco beach takes us about 15 minutes. There are days, especially in the summer where the heat is incredible and the humidity palpable. 15 minutes can seem like an eternity but once we come around the corner and we can see the blue water and feel the Caribbean breeze we instantly remember why we moved down here 2 years ago.

Along the walk we pass wildlife, resort goers, local families enjoying a beautiful day and fishermen hard at work.

One of our favourite spots along the walk into town is the beach side cenote at Playa Punta Esmeralda. As you can see this is a local favourite, especially on Sundays. It’s incredible how cold the water is as it flows from the limestone pores of the earth into the sea.

Any walk into town wouldn’t be complete unless we stop and grab some litros from some of our favourite stops along the way. One of the best is Fe on 1st ave. They have great ceveche, burritos and litres of beer for 70 pesos.

I can’t wait until our next adventure into town. Maybe I’ll convince Jasmin to do it again this Sunday.

We are SO STOKED To be announcing our return to ‪#‎PegCity‬ SUMMER 2017! We love any chance we have to return to our hometown. We’ll be taking a week early August to photograph a wedding in the Okanagan Valley, BC. But aside from that, we’ll be celebrating Canada’s 150th birthday celebration, and taking in the comforts that home has to offer for July 2017!

New website is up & a couple of things!

As you may have noticed by now our new website is up and running. We love how it looks and hope you do as well. Please let us know what you think and if you run into any issues/errors please let us know so we can fix them.

We’re keeping busy and have a very full next few years. Looks like we’ll be doing some travelling, we wont let any secrets slip until details are finalized but we are very very excited.

One big issue we’ve noticed with the new website is that some of our previous blog posts are now blank. I’ll try and fix this over the coming months but I’m not sure how successful I’ll be.

Expect a real blog post/update hopefully soon. Jasmin is the real writer in our partnership and she is has been so busy recently. What would I do without her?!

Amazing time in Cuba!

We’ve been so bad lately for posting blog updates but we promise it’s because we’ve been so busy. We’ve had a tonne of guests coming and going. Friends visiting from all over Canada and last week we were in Cuba photographing Jasmin’s cousins incredible destination wedding at Hotel Playa Cayo Santa Maria
